The 2021 BACCHUS Family Wine Chardonnay is a single vineyard wine from Margaret river. All grapes are handpicked, drained, pressed and fermented cool in french oak hogs heads with a selected yeast strain.
The wine has completed Malolactic conversion and has been stirred on its lees for a rich and creamy texture. The oak and acid further enhance the palate with length and texture giving a balanced and elegant wine.
After 10 months in oak, no fining or stabilisation agents were added before it was filtered and bottled. - Mr.Simply

Mr. Simply Notes : BACCHUS Family Wine Chardonnay 2021 shows a strong citrus focus with lemon zest, crushed stone minerality. On the palate the time unsulphured on lees show some crumbly crunchy Arnott’s classics, adding weight to the palate with fine/integrated oak giving this wine quality to maintain in your cellar for a decade if you have the patience.
PRO-TIP : To truly appreciate this legendary wineyard, you should enjoy one bottle every 6 months. So you’ll want to stock up on this vintage.

Jake Bacchus, the winemaker, carefully chose a career in wine. Why wouldn’t he, with a name like “Bacchus”, the Greek God of wine! His career started in 2002 and Jake honed his craft by working at wineries in other countries like Italy, France and America.
The winemaking for this wine is very minimalistic and intervened with only when necessary giving these varieties the best chance to show their true potential. Get it right in the vineyard and the rest of the process is more custodial than manipulative.
