If you want something extremely special and rare this is the wine for you!
Jake Bacchus, the winemaker, carefully chose a career in wine. Why wouldn’t he, with a name like “Bacchus”, the Greek God of wine! His career started in 2002 and Jake honed his craft by working at wineries in other countries like Italy, France and America.
The winemaking for this wine is very minimalistic and intervened with only when necessary giving these varieties the best chance to show their true potential. Get it right in the vineyard and the rest of the process is more custodial than manipulative.
Hand picked, hand made, hand bottled and packaged by the Bacchus family and sometimes a few of our friends. The wine was left on skins for 29 days and was basket pressed and matured in 100% new French oak.
Simply Wines only uses Grassl Glass.
